Silo is the world’s first zero-waste restaurant, crafting everything from its natural form to cut out food miles and over-processing. The team behind the venture is so serious about sustainability that they mill their own flour, churn their own butter, roll their own oats (which they then make their milk from) right on the premises and they even have an in-house brewery to make homemade natural fermented drinks. Everything from the furniture to the plates has been upcycled from material that would have otherwise been wasted, and the result is a chic, inviting space with earthy tones and natural textures. Silo has a daily-changing, mostly plant-based menu of innovative dishes or you can enjoy a five-course tasting menu. In any case, start with the amazing siloaf and aged butter (with flour milled and butter churned on site). It is worth the venture, just a short 10-minute walk away from the development.
